    Most parents know that eating too much junk food can contribute to weight gain, but its effects on children’s metabolism may begin much earlier than previously thought.
    A new study published in the journal Nutrients found that children who consumed higher amounts of ultra-processed foods (UPFs), commonly referred to as junk food, showed early changes in how their bodies produced and responded to insulin, even though they did not have diabetes.

    While the findings do not prove that junk food causes diabetes, they suggest that unhealthy eating habits during childhood may influence metabolic health long before symptoms appear.

    Are All Ultra Processed Foods Really Junk Foods?

    Ultra-processed foods are industrially manufactured products made with ingredients that are rarely used in home cooking, such as refined starches, added sugars, unhealthy fats, flavour enhancers, preservatives, colours, and emulsifiers.

    Many foods commonly called junk food fall into this category.

    Ultra Processed Junk Foods and Insulin Spike

    Researchers analysed data from the San Antonio Family Assessment of Metabolic Risk Indicators in Youth (SAFARI) study, which included 508 non-diabetic Mexican American children aged 6 to 17 years with dietary information available.     On average, 53.3% of the children’s daily calorie intake came from ultra-processed foods, highlighting how common these foods were in their diets.

    What Did the Study Find?

    Children who consumed more ultra-processed foods tended to show:

    • Lower insulin sensitivity
    • Higher insulin resistance
    • Higher fasting insulin levels
    • Early changes in insulin secretion after consuming glucose

    These findings suggest that their bodies may have been working harder to keep blood sugar levels within the normal range, even though the children had not developed diabetes.

    However, after researchers adjusted some analyses for total calorie intake, several associations became weaker, while others remained significant. This indicates that the overall amount of food consumed may partly explain the findings, although it does not rule out an independent role of ultra-processed foods.

    Type 2 Diabetes Doesn’t Happen Overnight

    Type 2 diabetes usually develops gradually over many years.

    Before blood sugar levels become abnormal, the body often goes through a period during which insulin becomes less effective. To compensate, the pancreas produces more insulin.

    The researchers suggest that higher intake of ultra-processed foods may be associated with these early metabolic changes, offering an opportunity to identify children at higher risk before disease develops.

    How Might Junk Food Affect Insulin?

    Scientists believe several factors may contribute. Ultra-processed foods are often:

    • High in refined carbohydrates and added sugars
    • Low in dietary fibre
    • Highly palatable, encouraging overeating
    • Rapidly digested, causing blood sugar spikes
    • Rich in additives and emulsifiers that may influence gut health

    Previous research suggests these characteristics may promote inflammation, alter gut bacteria, and reduce the body’s ability to use insulin efficiently.

    Does This Mean Junk Food Causes Diabetes?

    No. This study found an association, not proof that junk food directly causes insulin resistance or diabetes.

    The researchers note several important limitations:

    • The study was observational and measured diet at one point in time.
    • Food intake was assessed using a food frequency questionnaire, which may not capture every detail accurately.
    • The dietary data were collected more than 20 years ago, and food processing methods have changed since then.
    • The study included predominantly Mexican American children, so the findings may not apply equally to all populations.
    • Many statistical comparisons were made, and only one association remained statistically significant after applying a strict correction for multiple testing.

    The authors conclude that larger, long-term studies are needed to confirm these findings.

    How Can Parents Help Children Eat Less Junk Food?

    Reducing ultra-processed foods does not mean eliminating every treat. Instead, experts recommend gradually building healthier eating habits.

    Parents can:

    • Offer fresh fruits instead of packaged sweets.
    • Replace sugary drinks with water or milk.
    • Include whole grains, pulses, vegetables, and nuts in meals.
    • Keep healthy snacks easily available at home.
    • Limit highly processed packaged foods.
    • Encourage regular family meals.
    • Involve children in shopping and meal preparation to build healthier food choices.

    Small, consistent dietary changes can support healthy growth while reducing long-term metabolic risks.

Encouraging balanced meals with minimally processed foods from an early age may help support healthy insulin function and reduce future cardiometabolic risk.
