Is Full-Fat Really the Worse Choice?

Low-fat dairy may not always have an advantage. A new study found three daily servings of full-fat dairy did not worsen weight, cholesterol, or insulin resistance.

Low-Fat Dairy: Is Full-Fat Really the Worse Choice?
    Highlights:

    • Full-fat dairy did not worsen weight or body fat after 12 weeks
    • Three daily servings did not raise cholesterol or insulin resistance
    • The findings challenge the idea that less dairy fat is always better

For decades, people have been encouraged to choose low-fat or fat-free dairy because these products contain less saturated fat.
But a new study from the University of Toronto suggests that the picture may be more complicated. Researchers found that adults who consumed three servings of full-fat dairy every day for 12 weeks did not experience meaningful increases in body weight, body fat, cholesterol, or insulin resistance (1✔ ✔Trusted Source

    ).

The study also found some potentially positive effects, including improvements in blood pressure and higher intakes of calcium, protein, and vitamin D.

The findings do not mean that full-fat dairy is automatically healthier than low-fat dairy. Instead, they add to growing evidence that the health effects of dairy may depend on the type of dairy, the overall diet, and a person’s individual health needs.

Did Three Servings of Full-Fat Dairy Harm Weight or Cholesterol?

The new University of Toronto study, led by Professor Harvey Anderson, tested whether eating full-fat dairy every day could negatively affect weight, cholesterol, or other measures of metabolic health.

The 12-week study included 74 adults with overweight or obesity.
Participants followed different dietary approaches, including a calorie-restricted low-dairy diet and diets providing three servings of dairy each day. Those in the dairy groups received full-fat dairy products as part of the study.

Health Effects After 12 Weeks of Dairy Intake

Health measure What the study found What this means
Body weight No meaningful increase Three daily servings did not cause significant weight gain
Body fat No meaningful worsening There was no significant increase in body-fat measures
Cholesterol No adverse change Full-fat dairy did not worsen blood cholesterol
Insulin resistance No evidence of worsening Dairy did not appear to reduce insulin sensitivity
Blood pressure Improved This was one of the favorable findings
Calcium Intake increased Dairy provided more calcium
Protein Intake increased Participants received additional protein
Vitamin D Intake increased Dairy increased vitamin D intake

The study found that full-fat dairy did not cause the metabolic problems that might be expected simply because it contains saturated fat. But because the study involved only 74 people and lasted 12 weeks, it does not prove that full-fat dairy is healthier than low-fat dairy.

Why Is Full-Fat Dairy No Longer As Simple As “Bad Fat”?

For decades, full-fat dairy was discouraged because it contains more saturated fat, which can raise LDL cholesterol and increase heart disease risk. This is why low-fat and fat-free dairy became standard advice.

But according to Harvard Health, newer research suggests that dairy should not be judged by its fat content alone (2✔ ✔Trusted Source
Is low-fat or full-fat the better choice for dairy products?

    Go to source).

    • Whole milk contains about 4.5 grams of saturated fat per cup. Harvard gives about 20 grams a day as a general limit for a 2,000-calorie diet.
    • The American Heart Association recommends a lower limit of about 13 grams a day, or less than 6% of calories, and continues to recommend low-fat dairy.
    • Yogurt and cheese, particularly fermented dairy, have shown more favorable cardiovascular associations in some studies.
    • However, the evidence is not completely one-sided. Harvard also cites research involving more than 400,000 adults in which higher dairy-fat intake was associated with greater cardiovascular mortality.

This means the new evidence does not say that full-fat dairy is healthier for everyone. Instead, it suggests that the type of dairy, portion size and overall diet matter alongside the amount of saturated fat.

Is Full-Fat Dairy Actually Bad For Your Heart?
The University of Toronto study was encouraging, but it included only 74 adults and lasted 12 weeks. That makes larger research useful for understanding whether the finding fits with what researchers have seen in much bigger groups.

A recent analysis published in Nature Communications covered about 900,000 people (3✔ ✔Trusted Source
A global analysis of dairy consumption and incident cardiovascular disease

    Go to source).

The results were not as simple as saying “full-fat dairy is bad” or “full-fat dairy is better.” Different dairy foods showed different patterns.

How Different Dairy Foods Were Linked With Heart Health

Dairy Type Key Finding What It Means
Dairy overall Linked with a 3.7% lower risk of cardiovascular disease in the updated meta-analysis Dairy overall was not linked with worse heart health
Dairy overall Linked with a 6% lower risk of stroke The overall finding was not harmful for stroke risk
Low-fat dairy Linked with lower cardiovascular and stroke risk Low-fat dairy remains a reasonable healthy choice
High-fat dairy Was not linked with higher cardiovascular disease risk overall Full-fat dairy was not automatically shown to be harmful
Cheese Showed a favorable association with cardiovascular disease Different dairy foods may behave differently
High-fat cheese Showed a favorable association with coronary heart disease Fat content alone may not explain the health effect of a food

Could The Type Of Dairy Matter More Than The Fat Label?

The research suggests that not all dairy products should be treated the same way. Milk, yogurt, and cheese provide different combinations of nutrients, and some types may offer benefits that go beyond their fat content.

Dairy provides important nutrients such as calcium, phosphorus, potassium, magnesium, vitamin B12, protein, and vitamins A and D.

The source also highlights fermented dairy, especially yogurt with live cultures or probiotics, as a useful choice because these products may offer additional benefits for gut health.

What To Check Why It Matters
Saturated fat Helps you keep track of how much saturated fat you are eating
Added sugar Some flavored or reduced-fat products may contain more added sugar
Protein Helps dairy contribute to your daily protein intake
Calcium Supports healthy bones and teeth
Vitamin D Can add to your vitamin D intake when the product is fortified
Live cultures Yogurt with probiotics may offer additional gut-health benefits
Ingredients Helps you spot added sugars, sweeteners and other ingredients
Serving size Shows how much of the product you are actually eating

So, Is Full-Fat Dairy A Healthy Choice?

The new study suggests that three servings of full-fat dairy a day did not worsen weight, cholesterol, or insulin resistance over 12 weeks. But it does not prove that full-fat dairy is healthier than low-fat dairy.

For most people, the choice can depend on overall diet, portion size and personal health needs. If you have high cholesterol or heart disease, limiting saturated fat may still be important.

The simple message: full-fat dairy can fit into a healthy diet, but it is not necessary for everyone.

    Frequently Asked Questions

Q: Did three servings of full-fat dairy cause weight gain?

A: No. The 12-week study found no meaningful worsening in body weight or body fat among participants consuming three servings of full-fat dairy daily.

Q: Did full-fat dairy increase cholesterol in the study?

A: No. The researchers found no significant effect on fasting blood cholesterol during the 12-week intervention.

Q: Did full-fat dairy affect blood pressure?

A: The group consuming three servings of full-fat dairy without calorie restriction had a reduction in systolic blood pressure after 12 weeks.

Q: Is full-fat dairy healthier than low-fat dairy?

A:  Not necessarily. This study shows that three servings of full-fat dairy did not worsen several metabolic measures over 12 weeks. It does not prove that full-fat dairy is healthier than low-fat dairy.

Q: How much full-fat dairy did participants consume?

A: The intervention provided three servings of full-fat dairy each day for 12 weeks.

Q: Can people with high cholesterol eat full-fat dairy?

A: The study does not establish that full-fat dairy is appropriate for everyone with high cholesterol. People with high cholesterol or cardiovascular disease may need to discuss their overall saturated-fat intake with a healthcare professional.

Q: Does dairy fat affect heart health differently depending on the food?

A: Possibly. Larger research suggests that dairy foods do not all have identical associations with cardiovascular health. In a global analysis involving about 900,000 people, associations differed by dairy type and population.
