Cancoillotte’s comeback is no surprise | Cheese
Yes, we French people do value taste in cheeses (The French are hitting their protein goals – thanks to a cheese that looks like ectoplasm, 18 May). There is a myriad of flavours in our dairy industry, from extreme farmhouse dungy-funk to sterilised stinky plastic. But most of our industrial cheeses sit firmly in the vicinity of savoury hardened fat.So it’s no surprise that cancoillotte is making a comeback! In Paris in my late 20s, every single night out (or in) started with an apéro dînatoire (drinks and snacks). And cancoillotte was a staple. Why? Because if you microwavay it…

An ancient solar storm left clues in tree rings and a famous poet’s diary: ‘Red lights in the northern sky’
The solar cycle was several years shorter and the sun was experiencing an unusually active phase at the beginning of the 13th century — at least, that’s the story told by evidence left behind in tree rings and historical records that suggest a burst of protons and enhanced coronal mass ejections battered Earth between the years 1200 and 1204 CE.More specifically, scientists led by Hiroko Miyahara of the Okinawa Institute of Science and Technology (OIST) Solar–Terrestrial Environment and Climate Unit in Japan have found remnants of a dramatic solar proton event in tree rings dating back 825 years.A solar proton…
A Youth-Led Campaign Claims a Win For Climate Justice
A climate justice seed planted by young Pacific Island students in 2019, as mass participation in climate demonstrations peaked in the millions, is starting to reshape international law around the realities of a rapidly warming planet. At the United Nations General Assembly this week, 141 countries passed a resolution welcoming an advisory opinion on climate change from the world’s top court, voting to “translate the Court’s findings into enhanced multilateral cooperation and accelerated climate action at all levels, consistent with international law.” The nonbinding advisory opinion was issued last year by the International Court of Justice after the General Assembly…

Kia is killing off its cheapest gas car, but a new EV will replace it
Starting at about $20,000, the Picanto is Kia’s most affordable new car in Europe, the UK, and several other global markets. The entry-level gas car is likely on its way out as part of the shift to electrification, but Kia has a new EV that will replace it. Is Kia replacing the Picanto with an EV? The Picanto starts at just €17,590 ($20,000) in Germany and £17,095 ($23,000) in the UK, serving as an affordable city car. There’s just one (big) problem: It’s still powered by a gas engine. The Picanto is the last purely gas-powered city car you can…
The $8 Handheld Fan That’s Kept Me Cool From Scottsdale to the Hamptons
Summer is all fun and games until you’re standing on a sweltering subway platform, practically melting, regretting every moment you ever wished away winter. Two summers ago, after one too many days in a row coming into the office dripping sweat, a coworker recommended I get a portable fan. Without much delay, I purchased an $8 handheld fan from Amazon—and honestly, it’s some of the best money I’ve ever spent. As soon as the weather warms up, like it has this past week in New York, my tiny fan lives in my everyday tote. And on the weekends, I tuck…
